Very flavorful gravy, like French onion soup without the bread and cheese on top.
Yield: about 5 cups

Ingredients
- 1 T oil
- 3 large onions, sliced
- 2 cloves garlic, minced
- 1 T brown sugar
- ⅔ c flour
- 3 c vegetable stock
- 2 T soy sauce
Directions
Heat the oil over low heat, add onions, garlic, and sugar, and sauté until golden brown.
Slowly add the flour, stirring constantly, and cook another few minutes until you can’t see it.
Whisk in the stock and soy sauce, bring to a boil, lower heat, and simmer for 20 minutes.
Notes
Serve with mashed potatoes or just about any mock meat.*
