Vegan aïoli

If you love garlic, this garlicky mayonnaise is a real treat. It’s incredibly easy to make and unbelievably delicious.

Yield: 2 cups

Time: 5 minutes

Tools

  • small bowl
  • rubber spatula
  • garlic press  or  knife

Ingredients

  • 2 c mayonnaise
  • 1-2 cloves garlic
  • lemon juice (optional)
  • salt (optional)

Directions

Press or mince 1 clove of garlic and stir into the mayo.

Taste and add more garlic, lemon and/or salt, as you like.

Notes

Aïoli is wonderful with steamed vegetables, on sandwiches, or even as a dipping sauce for things like Chick-en nuggets and Breaded tofu.

"Aïoli" comes from the Provençal words ai (garlic) and oli (oil). The original, traditional recipe includes just emulsified olive oil and garlic, but it’s more commonly made like mayonnaise: with raw egg, oil, and garlic.
