Press or mince 1 clove of garlic and stir into the mayo. Taste and add more garlic, lemon and/or salt, as you like. |

Aïoli is wonderful with steamed vegetables, on sandwiches, or even as a dipping sauce for things like Chick-en nuggets and Breaded tofu. "Aïoli" comes from the Provençal words ai (garlic) and oli (oil). The original, traditional recipe includes just emulsified olive oil and garlic, but it’s more commonly made like mayonnaise: with raw egg, oil, and garlic. |
