Blend up cashews with water to replace cream in soups, sauces, and desserts.

Ingredients
- 1 cup raw cashews, soaked for 2-4 hours or ¼ c cashew butter
- 1 cup water
Directions
Place drained cashews and water in blender, and blend at high speed until smooth.
Strain the cashew cream, saving the bits of nuts for your next smoothie or cake.
Notes
You can make non-dairy cream with pretty much any type of raw nut. Personally, I like the creaminess of cashews and the richness of Brazil nuts.
Unfortunately, cashew cream curdles in coffee – I have yet to find a decent homemade non-dairy creamer.
