I don’t know where this recipe comes from or if there’s a nicer name for it; all I know is that my mother used to make it when I was a kid and it only has 5 ingredients. The buttery, almost smoky onion flavor and the melty cottage cheese are absolutely delicious!

Cook the pasta according to package and drain.
Meanwhile, melt the butter, add the onions, and sauté over medium-high heat, stirring frequently, for 5 minutes. Add salt and continue sautéing for another 10-15 minutes, until onions are somewhat shrunken and medium- to dark-brown in color. Stir in the pasta and cook for a minute or two, then add cottage cheese. Keep stirring – when the cottage cheese just starts to melt, it’s ready – serve immediately. |
Notes | This recipe works well with any flavor pasta – white, wheat, spelt, etc. It’s also great for using up leftover cooked pasta – just leave it out of the fridge for 30 minutes and add it as per the directions above.
