Macaroni Salad

A simple but tasty dish. Macaroni salad is great for picnics and buffets, or as a side dish. Macaroni salad
Yield 4-6 servings
Time 20 minutes
  • saucepan
  • colander
  • large bowl
  • wooden spoon
  • 1 c dressing*
  • 1 t mustard (optional)
  • salt
  • pepper
  • 1 pound macaroni, cooked, drained, and rinsed with cold water
  • 2 c cherry tomatoes, halved
  • 2 celery stalks, chopped
  • ½ small onion, finely chopped
Directions If using mustard, stir into the dressing along with the salt and pepper.

Add everything to the dressing, mix well, taste, and adjust seasonings.

*Shown with vinaigrette, but you could also use aïoli, herb dressing, mayonnaise, tzatziki, vegan mayonnaise, or vegan sour cream.

Notes Feel free to add/replace vegetables. Some other tasty possibilities: sweet corn, sun-dried tomatoes, green pepper, carrot.
