Whether you stocked up on too many potatoes, are worried that your tofu will
go bad if you don't eat it right away, or just have a taste for something -
anything - made with pumpkin, this is the page that can help. More ingredients will be added soon, so bookmark this page and visit again soon.
Bean and Lentil Recipes
Beans and lentils are important sources of vegetarian
protein. Lucky for us, they are also versatile and taste great! Take a look
at this list of different ways to enjoy beans and lentils in soups, salads,
veggie burgers, and more.
Bell Pepper Recipes
Bell peppers add interesting flavor and texture to recipe without the
spiciness offered by hot peppers. Here are my favorite recipes featuring bell
peppers.
Bread and Grain Recipes
All kinds of recipes made with bread or any kind of grain.
Cheese Recipes
If you're a cheese-loving ovo-lacto like me, here are some great ways to indulge
yourself.
Egg Recipes
If you're a vegan, you should skip this page. But if you, like
me, are an ovo-lacto vegetarian who loves the convenience and
versatility of eggs, you are sure to find some inspiration (and good
food!) in these dishes made with eggs.
Eggplant Recipes
In my experience, eggplant is something you either love or you hate. Its texture
is rather meaty and its flavor quite distinctive. If you love eggplant like I
do, enjoy more of it with these recipes.
Flaxseed Recipes
Flaxseed is an excellent source of vegetarian nutrition - here
are some easy and delicious ways to incorporate it into your diet.
Garlic Recipes
Garlic has tons of flavor, is good for your heart, and supposedly makes you
taste bad to bugs. What more can you ask for? Here are some of my favorite
recipes to help you get more garlic into your diet.
Leek Recipes
Leeks take a little cleaning, but
they have great flavor, particularly in soup. They're a bit milder than onions
and garlic, and despite what most recipes say, you can eat pretty much the whole
thing, including the dark green leaves.
Mock Meat/Cheese Recipes Some vegetarians avoid mock meat recipes, while others swear by them. If
you're in the latter category, or if you're just interested in trying some
vegetarian and vegan versions of typical dishes, take a look at these mock meat
and dairy recipes.
Mushroom Recipes
Mushrooms are another food that elicits strong opinions - most people either
love them or hate them. The texture is a bit strange, and the less said about
what mushrooms actually are (the fruit of a fungus which feeds on decay) the
better. On the other hand, mushrooms are good for detoxifying, high in
protein,
and tasty, so here's a collection of vegetarian recipes that call for mushrooms.
Nut Recipes
Nuts are an excellent source of vegetarian protein, and they taste great too!
Check out this index of vegetarian recipes that include nuts.
Olive Oil
In the last 20 years or so, olive oil has become a hot commodity.
Here is an introduction to this wonderful food and a list of
recipes.
Olive Recipes
Olives are good on their own, but they're even better on pizza and in salads.
If you like olives, you'll love these recipes with olives.
Onion Recipes I love onions - red, yellow, white, green, fresh, sautéed, whatever. Here is a collection of recipes that include onions.
Pasta Recipes
If it weren't for pasta, I probably wouldn't survive as a vegetarian. Not only is pasta versatile, it's also healthy and delicious. Check out this index of vegetarian pasta dishes, lasagnas, and sauces. Potato Recipes
Everyone loves potatoes, and luckily for us they are used in all kinds of soups,
side dishes, and even salads. Check out this collection of vegetarian potato
recipes. Pumpkin Recipes What can you do with pumpkins? Maybe more than you think - here are some great vegetarian pumpkin recipes. Rice Recipes Rice is an inexpensive and versatile food, but I always seem to eat it in the same ways. Here's a collection of recipes that are either made with rice or complement it nicely.
Seitan Recipes
Seitan is a vegetarian meat replacement made by extracting the gluten from
flour. It is an excellent source of protein and very versatile. Spinach Recipes I consider spinach a vegetarian staple. In addition to being a good source of vitamins A and C, calcium, phosphorus, and protein, spanish is versatile and equally delicious raw and cooked.
Squash recipes
There are many varieties of squash, but the various members of the two main
categories - summer squash and winter squash - are oftentimes interchangeable in
recipes. Here are some great recipes for squash.
Sun-Dried Tomato Recipes
Sun-dried tomatoes are one of my favorite ingredients. They add a
particular flavor that goes brilliantly with cheese, in cream sauce,
on top of pasta... you name it.
Sweet Potato Recipes The terms "sweet potato" and "yam" are used more or less interchangeably in the US,
though the two vegetables are in fact unrelated. Whatever you call them, they are
plentiful in the fall and delicious in many recipes.
Tempeh Recipes
Tempeh is a healthy and versatile source of vegetarian protein. Tofu Recipes
Tofu is commonly used in vegetarian cooking thanks to its high protein, low fat,
and flexibility of use. Here are just a few of the many different ways to enjoy
tofu. Tomato Recipes Fresh tomatoes are one of the best parts of summer, in my opinion. The tomatoes in my garden aren't quite ripe yet, but once they are, I'll be making just about all of these dishes featuring tomatoes.
Zucchini Recipes
Zucchini grows like a weed in our garden, and I find it difficult to eat it all without getting bored. Sound familiar? Here are some tasty ways to use up fresh zucchini. If you have a favorite recipe that you would like to share please do so on the forum!
