Marinade is one of the most flexible recipes there is, because there is no set recipe: just combine a few liquids with herbs and spices, you don't even really need to measure.
It takes a bit of time, but this is an easy and very delicious recipe for seitan bourguignon, a mock-beef version of the traditional French stew that is also excellent over pasta, rice, or polenta.
Risotto isn't difficult to make, though it does require a lot of standing at the stove, stirring away. The end result, however, is delicious and a wonderful comfort food.
