Raw Lemon Curd

A creamy, sweet-tart custard that you can eat with a spoon or in a lemon tart.

Yield 2½ cups
Time 5 minutes, plus time to chill
  • blender
  • 1½ c fresh coconut
  • ¾ c lemon juice
  • ¾ c agave syrup
  • ¼ t salt
  • 1/8 t turmeric
  • 2 T coconut oil, melted
  • 1 T soy lecithin powder (optional)
Directions Blend coconut, lemon, agave, salt, and turmeric until perfectly smooth.

Blend in remaining ingredients.

Chill for at least 2 hours or use in a raw lemon tart.
