Grinding up raw vegetables with optional nuts creates a tasty, rice-like side dish.

Ingredients
½ c raw cashews, pine nuts, or macadamia nuts (optional)
½ t salt
4 cups of one or more raw, trimmed vegetables, cut into chunks:
- butternut squash, peeled
- cabbage
- cauliflower (shown)
- celeriac, peeled
- jicama, peeled
- radish
- parsnip, scrubbed or peeled
- turnip, scrubbed or peeled
- yellow summer squash
Directions
Pulse the nuts until roughly chopped.
Add the salt vegetables and pulse until everything is in small pieces, like rice.
Notes
Try adding 1-2 t of spices, such as curry, garlic powder, dehydrated onion, or cayenne pepper.
