Raw Vegetable Rice

Grinding up raw vegetables with optional nuts creates a tasty, rice-like side dish.
Yield 6 – 8 servings
Time 10 minutes
  • food processor
Ingredients ½ c raw cashews, pine nuts, or macadamia nuts (optional)

4 cups of one or more raw, trimmed vegetables, cut into chunks:

  • butternut squash, peeled
  • cabbage
  • cauliflower (shown)
  • celeriac, peeled
  • jicama, peeled
  • radish
  • parsnip, scrubbed or peeled
  • turnip, scrubbed or peeled
  • yellow summer squash

½ t salt

Directions Pulse the nuts until roughly chopped.

Add the vegetables and salt and pulse until it’s in small pieces, like rice.

Notes Try adding 1-2 t of spices, such as curry, garlic powder, dehydrated onion, or cayenne pepper.
