Vegetarian Indian Recipes

Because many Indians are vegetarian, there are obviously many vegetarian Indian recipes. Here are some of my favorites.
 

Bharta - Smoked Eggplant
Bharta is a smoked eggplant dish popular in the villages of Punjab. It is usually served with greens, bread, and lassi.

Biryani
This hearty vegetable and rice casserole is from India.

Dal
Dal is the Indian term for lentils, and in cooking refers to any of the many Indian dishes made with lentils. There are many variations ranging from simple to complex. This recipe is on the easy side.

"Lamb" Curry
This mock lamb curry is made with seitan (wheat gluten) and is spicy and delicious.

Lassi
Lassi is a sweet Indian drink made from yogurt - it's perfect for cooling your mouth while eating spicy food.

Naan Bread
Naan is a traditional Indian flat bread. The delicious bread is well worth the time and effort it takes to prepare.

Sambar
Sambar is probably the most universal dish of South India. It has been adapted for the cooler climate of Monterey Bay. This recipe was submitted by a forum member.

Spicy Tomato Cream Sauce
This spicy tomato cream sauce is an Indian recipe that goes wonderfully with hard-boiled eggs and warm bread (such as naan, pita, or French bread).

Vegetable Curry
Curry is one of those dishes that can be made with just about any combination of vegetables - use this vegetable curry recipe as a guide.
