| Vegetarian Mexican / Tex-Mex Recipes
Mexican and Tex-Mex food is spicy and rich. Not much of it is vegetarian,
however, so eating out at restaurants can be tricky. Fortunately, many classic
Mexican and Tex-Mex dishes can be made vegetarian with simple subsitutions. ˇOlé!
Bean Burritos
You can either make these burritos yourself or put the ingredients on
the table and let everyone build their own.
Black Bean Zucchini Quesadillas
Black beans, zucchini, and a bit of cheese folded into tortillas - this may
be the best quesadilla you've ever tasted.
Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty
much anything you like. This recipe is for a basic breakfast burrito that you
can customize to suit your own tastes.
Cheese Enchiladas
Cheese enchiladas are very rich and filling, but if you're a cheese lover
like me, they're one of the best dishes to get your fix.
Fajitas
Everyone seems to love "build it yourself" meals, and fajitas are a
delicious way to do this. Hot fillings and cold toppings are served with

traditional ones, which are cooked in lard. Refried black beans are yummy too!

This is a traditional, somewhat spicy Spanish side dish.

This is a quick and interesting way to eat some good veggies.
Tamale Pie
An authentic Mexican dish that can be made as spicy (or not) as you like.
Tostadas
Tostadas are kind of like the Mexican equivalent of pizza, with beans,
cheese, and guacamole piled on top of a tortilla crust.
