Directions |
Preheat oven or toaster oven to 400.
Arrange the 2 muffin halves or pieces of bread on dish. Lay tomato slices on top, then add a scoop of mock tuna. Top with optional peanuts (push them slightly into the tuna) and cheese. Bake for 5-10 minutes, until cheese is melted. |

Notes | I like the inside of the tuna to stay cold – bake longer if you prefer it hot inside and out.
