Warm mock tuna combined with melted cheese makes a fantastic open-face sandwich.
Yield: 2 open-face sandwiches

Ingredients
- English muffin or 2 pieces of bread
- 2 tomato slices
- 1 c mock tuna salad
- 3-4 T peanuts (optional)
- several T grated cheese or 2 slices (cheddar, Swiss…)
Directions
Preheat oven or toaster oven to 400.
Arrange the 2 muffin halves or pieces of bread on dish. Lay tomato slices on top, then add a scoop of mock tuna. Top with optional peanuts (press them slightly into the tuna) and cheese.
Bake for 5-10 minutes, until cheese is melted.
Notes
I like the inside of the tuna to stay cold, but you can bake longer if you prefer it hot inside and out.
