In some ways, the low-carb diet craze seems to be the opposite of vegetarianism, since fruits, vegetables, and grains are the foundation of a balanced vegetarian diet. It would be impossible to be a vegetarian and closely follow the Atkins diet plan, as it involves eating a lot animal products.
While the focus of Low-Carb Vegetarian is on recipes, the book also includes information about carbohydrates and low-carb diets, setting up a low-carb vegetarian kitchen, daily intake guidelines, and sample meal plans. The recipes themselves, which include a nutritional analysis (protein, fat, carb, calorie, and fiber content), tend to be quick and easy, and cover the entire range. You'll find everything from breakfast scrambles and smoothies to soups, salads, pastas, side dishes, and desserts. I very much enjoyed Deviled Tofu with Celery and many of the other recipes, including "Thai Red Curry Tofu" and "Taco Salad," sound absolutely delicious. Other than a lot of mock meat ingredients, which some vegetarians prefer to avoid, there's nothing in this variety of recipes that would disappoint anyone, whether or not they are vegetarian or following a low-carb diet.
