Tofu

noun A vegetarian replacement for meat, eggs, and cheese, made from curdled soymilk pressed into blocks. Tofu can be eaten fresh or cooked in many different ways and is an excellent source of protein. Originally from China.

  

Types + uses

  1. Extra-firm tofu - frying, roasting, grilling, marinating
  2. Firm tofu (Chinese style) - stir-frying, boiling, filling
  3. Soft tofu (Japanese style) - puréeing
  4. Silken tofu (smooth, custardy, not fresh) - puréeing, simmering, egg substitution
