Recipe:
Seitan, Onion, and Bell Pepper Wraps
Wraps are the fun version of sandwiches. Just heat up a tortilla, add some
filling, and enjoy. This seitan, onion, bell pepper, and cheese filling makes a
hearty vegetarian wrap.

- cookie sheet or large baking dish
- aluminum foil
- large bowl
- wooden spoon
- small saucepan

| Ingredients |
- 5 c onions, thinly sliced
- 5 c red and/or green peppers, seeded and cut into strips
- 4 cloves garlic, minced
- 3 T olive oil
- 1˝ t dried oregano
- 1˝ t salt
- black pepper
- 1˝ c seitan, crumbled
- 1˝ c cheese, grated (feta, smoked mozzarella, Monterey Jack,
provolone, and cheddar are all good options)
- 8 8-inch tortillas

| Directions |
Preheat oven to 450. Oil the cookie sheet. Combine onions,
peppers, 2 T oil, and spices in a large bowl, then transfer to cookie sheet.
Bake for about 30 minutes, stirring every 10, until tender and golden brown.
When you stir the second time, wrap tortillas in foil and place in oven to warm.
Meanwhile, heat remaining T oil, add the seitan, and sauté, stirring
frequently, until golden - around 10 minutes.
Combine vegetables, seitan, and cheese. Lay out tortillas, add filling,
and roll up. Serve immediately. |
