Vegetarian recipes carnivores will devour
As you might guess from the title, The Meat Lover’s Meatless Cookbook is not written for vegetarians – or even by a vegetarian – but rather for meat eaters who want to eat some vegetarian meals. When study after study shows that cutting down on meat consumption is one of the best things you can do for your health, even diehard carnivores are realizing that it might be a good idea to skip the beef once a week or so. Lucky for everyone, vegetarian or not, one of those carnivores is Kim O’Donnel, who decided to give Meatless Mondays a try and wanted to make sure that what she was eating was just as tasty and filling as the meat-based dishes she would normally consume. She succeeded.
In keeping with the Meatless Mondays theme, The Meat Lover’s Meatless Cookbook includes 52 menus, a full year’s worth of meals, divided into seasons. While some of the menus include a single recipe for a main course, there are sidebars with suggestions for other dishes to round out the meal, including a killer tahini sauce to go with the best falafel I’ve ever had outside of a restaurant.
The recipes include a little bit of everything – pizza, pasta, soup, burgers, wraps, stuffed vegetables, savory pies… you name it. Some are quite time-consuming, as this book is intended for people who are serious about their food. The effort is definitely worth it, especially for dishes like Red lentil dal with cumin-fried onions and wilted spinach (I used chard – delicious!), Garlic scape pesto pasta, and Pepita-crusted tofu. These recipes aren’t pretending to be meat – they’re vegetarian recipes in their own right, and they’re delicious.
