Smoked tofu offers a nice contrast to the sweet crispness of caramelized carrots.

- large frying pan
- wooden spoon
- mandoline or sharp knife
- slotted spoon
- small bowl
Ingredients
- ¼ c olive oil, divided
- 4 oz vegan bacon or smoked tofu, diced
- 1 pound carrots (about 6 medium)
- 1 T fresh parsley, minced
- salt
- pepper
Directions
Heat 2 T oil over medium heat. Add bacon or tofu and sauté, stirring occasionally, until starting to color.
Meanwhile, slice the carrots on the diagonal into ¼-inch slices.
Transfer the bacon/tofu to the bowl and set aside.
Put remaining oil and carrots in the pan. Sauté until tender and golden-brown, stirring frequently, about 10 minutes.
Remove from heat, stir in the bacon/tofu and parsley, and season with salt and pepper.
Serve hot.
