Rice Crispy Treats

A simple recipe for rice crispy treats. Traditional marshmallows contain gelatin, so look for vegan


Yield 16 rice crispy treats
Time 5 minutes plus time to chill
  • square or rectangular baking dish
  • medium sauce pan
  • wooden spoon
  • 1 c marshmallow cream OR 2 c marshmallows plus 2 T margarine
  • ½ c smooth peanut butter (or other nut butter, such as cashew or almond)
  • 3½ c crispy rice cereal
Directions Oil the baking dish (or line with wax paper).

  • If using marshmallow cream, combine it with peanut butter over medium heat and stir until melty.
  • If using marshmallows, melt the margarine, add marshmallows, and stir until melted. Add peanut butter and stir until melty.

Gradually pour in cereal, stirring constantly.

Press into the baking dish and refrigerate for an hour. Cut into squares or rectangles and enjoy!
