Avocado Tomato Salad

This is one of the simplest salads ever, and it’s absolutely delicious. Avocado tomato salad
Yield 4-6 servings

  • bowl
Ingredients
  • 1 avocado, diced
  • 1 large ripe tomato, diced
  • ½ cucumber, seeded (optional) and diced
  • ¼ c red onion, diced
  • 1 c fresh mozzarella or feta cheese, cubed
  • several T excellent olive oil
  • dash of salt
Directions Toss the veggies and cheese, drizzle with olive oil, sprinkle with salt, and serve immediately.
Notes If you’re not going to eat the salad right away, I recommend combining everything except the avocado. You can add that at the last minute to keep it from getting mushy and turning brown.
