Recipe: Italian Sandwich
Red, white, and green always make me think of Italy, and mozzarella cheese,
tomatoes, and basil are a classic combination.

| Ingredients |
- 4 pieces of focaccia or Italian bread
- 4 t olive oil
- 1 clove garlic
- 1 pound fresh mozzarella
- salt
- pepper
- 2 tomatoes, sliced
- 1 bunch fresh basil OR several T pesto

| Directions |
Split the bread in half lengthwise and drizzle each piece with
olive oil. Cut the garlic in half and rub the cut edge on the bread.
Pat dry the mozzarella, slice, and arrange on bread, then season with
salt and pepper. Add tomatoes and basil or pesto, top with bread, and serve,
or wrap up to take on your picnic.
