vegetarianRecipe: Minty Lemonade

This tangy lemonade is so refreshing, you'll want to drink it all summer.

Yield 2 large servings
Time 5 minutes
Tools
  • Blender
  • 2 large glasses
Ingredients
  • ¼ c sugar
  • 10 fresh mint leaves
  • 6 T lemon juice (about 1½ lemons)
  • 6 medium or 3 large ice cubes, + additional ice for glasses
  • 1 1/3 c club soda or seltzer
  • 2 lemon wedges
Directions Blend the sugar and mint on high until leaves are minced, about 5 seconds.

Add lemon juice and blend on high for 5 seconds, then add ice and blend until it's crushed.

Fill the glasses with ice, then pour in the lemonade. Top off with club soda or seltzer, stir, garnish with lemon wedge, and serve.

Notes Adapted from Didi Emmons' Vegetarian Planet.

Try regular lemonade too.
