Recipe: Mock Tuna Melt
Warm mock tuna combined with melted cheese makes a fantastic open-face
sandwich.

| Ingredients |
- English muffin or 2 pieces of bread
- 2 tomato slices
- 1 c mock tuna salad
- 3-4 T peanuts (optional)
- several T grated cheese or 2 slices (cheddar, Swiss...)

| Directions |
Preheat oven or toaster oven to 400.
Arrange the 2 muffin halves or pieces of bread on dish. Lay tomato
slices on top, then add a scoop of mock tuna. Top with optional peanuts
(push them slightly into the tuna) and cheese.
Bake for 5-10 minutes, until cheese is melted.

| Notes |
I like the inside of the tuna to stay cold - bake longer if you prefer it hot inside and out. If you like mock tuna, try my tuna crêpe as well.
