I love Greek restaurants, but somehow I’d never tasted or even heard of bouyourdi before actually going to Greece – and now I eat this combination of roasted peppers, tomatoes, and feta every week.
Yield: 4-6 servings

Ingredients
- 2 c roasted red peppers
- 1 c tomato, diced or 1/3 c tomato sauce, such as marinara or tomato-garlic
- ½ c feta cheese, crumbled
- ½ c onion, chopped
- 3 T olive oil
- 1 t dried oregano or thyme
Directions
Preheat oven to 400.
Arrange the peppers in the baking dish, top with tomato (sauce), then sprinkle with feta and onion.
Drizzle with olive oil, then sprinkle with herbs.
Bake for 20-40 minutes and serve with fresh bread.
Notes
Bouyourdi is very good after 20 minutes, but as it browns, it gets even richer.
The bouyourdi recipes I’ve seen tend to have a lot more tomato, but I prefer red pepper as the main component, even if it’s not traditional.
