Maple syrup, soy sauce, and garlic make a flavorful glaze for green beans.
Yield: 4 servings
Time: 30 minutes
Tools
- large frying pan with lid
- wooden spoon
Ingredients
- 2 T olive oil
- 1 pound fresh or frozen* green beans, trimmed
- 4 cloves garlic, minced
- 2 t dried herbs (such as marjoram, oregano, or herbes de Provence)
- 2 T maple syrup
- 2 T soy sauce or tamari
- pepper
- ¼ c toasted walnuts or 2 T toasted pine nuts or sesame seeds
- lemon wedge
Directions
Heat the oil over medium-high heat, add green beans, and sauté for 5-10 minutes (longer for frozen) until starting to color.
Stir in garlic and herbs and sauté another minute, then add maple syrup, soy sauce, and pepper.
Reduce heat to medium, cover, and cook another 10-15 minutes, until beans are cooked the way you like them. Taste and add more soy sauce if needed.
Squeeze lemon over the top and toss, then transfer to plates and garnish with nuts or seeds.
Serve hot or warm.
Notes
Transfer frozen beans directly from the freezer into the pan – they’ll stay greener and crunchier than if you thaw them.
