Cole Slaw

Cole slaw, a perfect summer picnic salad, is traditionally made with mayonnaise. This cole slaw recipe includes several dressing variations.

Yield 4-6 servings
Time 1 h 10 minutes
  • large bowl
  • lid or plastic wrap
  • two wooden spoons
  • 4 c red and/or green cabbage, shredded
  • 1 bell pepper, finely chopped
  • 1 carrot, finely chopped or shredded
  • ¼ c white and/or green onion, minced
  • ¼-½ c fresh herbs (parsley, dill, and/or cilantro)
  • ¾-1 c dressing*
  • salt and pepper
Directions Combine the vegetables and herbs, then toss with the dressing.

Taste the cole slaw and add more dressing and salt/pepper if needed.

Cover and refrigerate for at least one hour before serving.
