Mock Chicken Salad

This simple tempeh salad really does resemble chicken salad. It’s great in sandwiches or atop a green salad. Tempeh chicken salad
Yield 4 servings
Time 30 minutes
Tools
  • vegetable steamer OR large saucepan, lid, and metal colander
  • knife
  • bowl
  • wooden spoon
Ingredients
  • 8 oz tempeh, cubed
  • ½ c mayonnaise
  • 2 T soy sauce
  • 1 stalk celery, finely chopped
  • ¼ c red onion or 2-3 green onions, minced
  • 2 T parsley, minced
  • ½ c pecans and/or walnuts, chopped
Directions Steam the tempeh for 20 minutes, then let cool for 10 minutes.

Meanwhile, combine the remaining ingredients. When the tempeh is cool, stir it in.

Chill and serve.
