Recipe:
Vegetarian BLTWarm "bacon"
contrasts nicely with crisp lettuce and ripe tomato, and makes a
delicious, nutritious vegetarian / vegan sandwich.

- medium frying pan
- tongs
- knife

| Ingredients |
- 2 slices bread (preferably whole grain)
- 1-2 t oil
- 3-4 slices vegetarian bacon*
- mayonnaise or
vegan mayonnaise
- 2 leaves of lettuce (or more, depending on size)
- 2-3 slices tomato
- several slices avocado (optional)

| Directions |
Optional: toast bread Heat oil over medium heat, add bacon,
and fry until golden and crisp. Turn and fry other side, then cut each slice
in half.
Meanwhile, spread mayonnaise on one slice of bread/toast, then
arrange lettuce, tomato, and optional avocado.
Place bacon on vegetables, top with other slice of bread, cut in
half, and serve immediately. |
| Notes |
*I like Fakin' Bacon from Lightlife, which is made from organic tempeh
and marinated in a slight smoky sauce. You can usually find it in the cooler
section of your favorite natural foods store, next to the tofu and tempeh.
This simple sandwich is packed with good nutrition: whole grain, vegetables,
and excellent vegetarian protein. |
