Recipe: Fresh Pea Soup
Use up the last of summer's fresh peas for this simple soup.

- large saucepan
- wooden spoon
- blender or food processor

| Ingredients |
- 4 c fresh peas
- 6 c milk or vegetable stock
- ¼ t marjoram
- ¼ t fresh rosemary
- ½ t thyme
- salt
- pepper
|
| Directions |
Simmer peas in milk or stock until tender, 5-10 minutes. Purée 1-2 c of the soup, depending on how thick you'd like it. Stir in minced herbs and serve.

This is a basic recipe that could be used for fresh corn, carrots, peppers - just about any fresh garden vegetable. |
