Recipe: Mock Feta Cheese

Here is a delicious vegan substitute for feta cheese.

Yield	1½ cups
Time	1 hour (mostly to marinate)
Tools	bowl whisk wooden spoon
Ingredients	¼ c olive oil ¼ c water ½ c red wine vinegar 2 t salt 1 T dried basil ½ t dried oregano ½ t pepper 1 pound firm herb tofu, cubed or crumbled
Directions	Place everything but the tofu in the bowl and whisk together. Add tofu, stir, and let sit for at least an hour.
