This crêpe filled with warm mock tuna is a real treat.
Yield: 2 crêpes

Ingredients
- 1 T oil
- 2 crêpes
- ½ c mock tuna salad
- 2-3 T peanuts (optional)
- several T grated vegan cheese (cheddar, Swiss…) or a cheese melt
- 2 T mayonnaise, sour cream, or another sauce, for garnish
Directions
Heat the oil.
Lay out the crêpes and mentally divide into quarters. Spoon half of the tuna onto one quarter, leaving half an inch empty around the circumference. Top with optional peanuts and cheese.
Fold the empty half of the crêpe over, then fold the remaining empty half over again (so that the crêpe is folded into a triangle with the tuna on the bottom layer). Repeat with the other
crêpe.
Fry for 3-4 minutes, flip, fry another 1-2 minutes.
Garnish and serve.
Notes
This recipe is from a restaurant I worked at in college – I think the peanuts are a great touch.
