- Extra-firm tofu – frying, baking, grilling, marinating
- Firm tofu (Chinese style) – stir-frying, boiling, filling
- Soft tofu (Japanese style) – puréeing
- Silken tofu (smooth, custardy, vacuum-packed) – puréeing, simmering, egg substitution
