Pesto is the Italian word for "pounded" and refers to the traditional means of making these kinds of sauces. Pesto rosso is a red pesto made from sun-dried tomatoes.
Yield: about 1½ cups

Tools
- small food processor
or - knife, bowl, and wooden spoon
Ingredients
- 1 c sun-dried tomatoes*
- ½ – ¾ c olive oil
- ⅓ c almonds or cashews, lightly toasted
- 2-3 cloves garlic, minced
- 1 T fresh rosemary or basil, or 1 t dried Italian herbs
- 1 T nutritional yeast (optional)
- ½ t salt
- black pepper
Directions
Place everything in the food processor and process until smooth.
Alternatively, you can finely chop the sun-dried tomatoes and nuts and mix them with the other ingredients.
Taste and add more salt / garlic / herbs / oil if needed.
Notes
If using oil-packed, drain them and start with the smaller amount of olive oil.
