French Toast Ⓥ

You might not think it’s possible to make delicious French toast without eggs – but you’d be wrong. In fact, it’s unbelievably quick and easy. This is a veganized version of the house recipe at a little café I used to work at in Illinois. Enjoy!

Tools

  • shallow bowl
  • whisk
  • large frying pan
  • spatula

Ingredients

  • 1 c non-dairy milk (I like cashew milk)
  • ¼ c chickpea flour
  • 1 T raw or brown sugar
  • 1 t cinnamon
  • ½ t nutmeg
  • ½ t vanilla
  • 8-12 slices of bread
  • several T butter, vegetable oil, or margarine

Directions

Whisk together milk and flour, then whisk in spices and vanilla.

Dip a slice of bread in the mixture and allow to soak up some liquid (about 30 seconds for fresh bread, one minute for stale bread).

Heat a T of butter over medium heat. When the pan is very hot but not smoking, coat both sides of a piece of bread in the batter and place in pan. Repeat with a few more slices until you have a single layer of bread in the pan.

Fry for 3-5 minutes, until golden brown. Flip and fry the other side. Transfer to a plate and add more oil as needed, then repeat until you use up all the bread.

Notes

Serve hot with maple syrup, berry sauce, jam, or fresh fruit.
