Recipe: Scrambled Tofu
In the last year or so, I've cut down on my egg intake, and one thing I really miss is scrambled eggs. Although scrambled tofu doesn't taste quite the same, it's easy to make and can take any of the additions and toppings on my omelette ideas page.

- small frying pan
- wooden spoon

| Ingredients |
- 2 T vegetable or olive oil and/or butter
- 10 oz silken tofu, crumbled
- ¼ t turmeric or curry powder
- ¼ t salt
|
| Directions |
Heat the oil and/or butter over high heat. Add tofu and seasonings and cook, stirring frequently, until firm and hot, 3-5 minutes. Stir in additions and/or top with toppings and serve.

| Notes |
If you're adding onions, garlic, or mushrooms, you might want to sauté them in the oil/butter before adding the tofu. |
