This simple tempeh salad really does resemble chicken salad. It’s great in sandwiches or atop a green salad.
Yield: 4 servings
Time: 30 minutes
Tools
- vegetable steamer OR large saucepan, lid, and metal colander
- knife
- bowl
- wooden spoon
Ingredients
- 8 oz tempeh, cubed
- ½ c mayonnaise
- 2 T soy sauce
- 1 stalk celery, finely chopped
- ¼ c red onion or 2-3 green onions, minced
- 2 T parsley, minced
- ½ c pecans and/or walnuts, chopped
Directions
Steam the tempeh for 20 minutes, then let cool for 10 minutes.
Meanwhile, combine the remaining ingredients. When the tempeh is cool, stir it in.
Chill and serve.
