Doesn’t everyone love waffles? They’re quick and easy, and customizable to everyone’s individual taste. This batter works for both waffles and pancakes.

Yield 8-10 waffles
Time 10 minutes
  • waffle iron
  • large bowl
  • whisk
  • spoon, cup, or ladle
  • 2 T butter
  • 2 c pancake mix
  • 1¼-1½ c milk
  • 2 eggs
  • 2 T vegetable oil

Follow the instructions on your waffle iron to preheat.

Meanwhile, whisk the pancake mix and milk until fairly well blended. Add the eggs and oil and whisk until mixed but still a bit lumpy. If it’s too lumpy, whisk in more milk. Too thin – add more pancake mix.

Cook and serve.
