vegetarian Recipe: Green Goddess Dressing

Invented in the 1920's in honor of William Archer's eponymous play, green goddess dressing is brightly colored and delicious.

Yield 1 cup
Time 5 minutes
Tools
  • food processor
  • container with lid
Ingredients
  • 1 c fresh parsley
  • 1 T fresh chives or scallions
  • 1 T onion flakes
  • 1 T dehydrated garlic
  • ¼ c olive oil*
  • ½ c mayonnaise or tofu mayonnaise
  • 3 T fresh lemon juice
  • ½ t salt
Directions Chop herbs in the food processor, add remaining ingredients, and blend until smooth. Taste and adjust seasonings, then transfer to container and refrigerate.
Notes

*The traditional green goddess recipe calls for sour cream, which makes a thicker, richer dressing.

Green goddess dressing is great as a dip, too.
