vegetarian Recipe: Mashed Sweet Potatoes

Looking for a tasty alternative to regular mashed potatoes? Try mashed sweet potatoes (aka yams).

Yield 4-6 servings
Time 40 minutes to 1 hour 10 minutes, depending on cooking method
Tools
  • Saucepan (if boiling or steaming)
  • Masher
Ingredients
  • 2 pounds sweet potatoes, scrubbed and unpeeled
  • Salt and pepper

Optional seasonings (use one or more)

  • A few T butter
  • 1 orange, juiced and zested
  • 2 T molasses
  • A few T bourbon
  • Sour cream on top
Directions There are three ways to cook sweet potatoes in preparation of mashing

1. Baking: Bake at 400º for 50-60 minutes, depending on size.

2. Boiling: Boil potatoes whole, 20-40 minutes.

3. Steaming: Steam, covered, over boiling water, 30-50 minutes.

With all of these methods, the potatoes are ready when they are very soft when pierced with a fork. Once cooked, you can peel the sweet potatoes, if desired.

Mash, add seasonings, and serve.

Notes Personally, I like my sweet potatoes plain with just a touch of butter.
