Recipe: Mashed Sweet Potatoes
Looking for a tasty alternative to regular mashed
potatoes? Try mashed sweet
potatoes (aka yams).

40 minutes to 1 hour 10 minutes, depending on cooking method |

- Saucepan (if boiling or steaming)
- Masher

| Ingredients |
- 2 pounds sweet potatoes, scrubbed and unpeeled
- Salt and pepper
Optional seasonings (use one or more) - A few T butter
- 1 orange, juiced and zested
- 2 T molasses
- A few T bourbon
- Sour cream on top

| Directions |
There are three ways to cook sweet potatoes in preparation of mashing 1. Baking: Bake at 400º for 50-60 minutes, depending on size. 2. Boiling: Boil potatoes whole, 20-40 minutes. 3. Steaming: Steam, covered, over boiling water, 30-50 minutes. With all of these methods, the potatoes are ready when they are very soft when pierced with a fork. Once cooked, you can peel the sweet potatoes, if desired. Mash, add seasonings, and serve.
