Looking for a tasty alternative to regular mashed potatoes? Try mashed sweet potatoes.

Time: 40 minutes to 1 hour 10 minutes, depending on cooking method

Ingredients
- 2 pounds sweet potatoes, scrubbed and unpeeled
- salt and pepper
Optional seasonings (stir in one or more)
- several T olive oil
- 1 orange, juiced and zested
- 2 T molasses
- A few T bourbon

Directions
There are three ways to cook sweet potatoes in preparation for mashing:
1. Baking: Stab each potato with a fork several times, then bake at 400º for 50-60 minutes, depending on size.
2. Boiling: Boil potatoes whole, 20-40 minutes.
3. Steaming: Steam, covered, over boiling water, 30-50 minutes.
The potatoes are ready when they are very soft when pierced with a fork. Once cooked, you can peel them, if desired.
Mash, add seasonings, and serve.
