vegetarian Recipe: Vegetarian Sausage

I haven't eaten sausage since the 80's, so I honestly don't know how much this vegetarian sausage tastes like the real thing. But I can tell you that it's a delicious, protein-packed breakfast side dish.

Time 1 hour 20 minutes

  • colander
  • small plate
  • clean kitchen towel
  • large bowl
  • steamer or stock pot + heat-safe colander
  • small bowl
  • whisk
  • wooden spoon
  • 8x8 baking dish
Ingredients
  • ½ package firm or extra-firm tofu
  • 1 package tempeh, cubed
  • 2 T soy sauce
  • 1 t oil
  • 2 eggs or vegan egg equivalent
  • 2 cloves garlic, minced
  • 1 T fresh rosemary, minced
  • 1½ t oregano
  • 1 t cumin
  • 1 t paprika or hot pepper flakes
  • 1 t pepper
  • 1 t nutritional yeast powder
  • 1 T corn starch or flour
Directions Press the tofu by placing it in a colander set over a bowl or the sink, place the plate on top, and balance a weight (such as a bag of flour) on top of that. Leave for an hour, then wrap in kitchen towel and squeeze out as much water as possible. Crumble into a bowl.

Meanwhile, steam the tempeh: if you don't have a steamer, put a couple of inches of water in a pot over high heat, place the colander inside, add the tempeh, cover with a lid, and let steam for 15 minutes. Let cool for a few minutes, then crumble and add to tofu, along with soy sauce.

Preheat oven to 350. Lightly oil the baking dish.

Beat the eggs, then add to tofu and tempeh along with remaining ingredients. Mix well.*

Spread the mixture into the baking dish and bake for 15 minutes. Let cool slightly and cut into squares.

Fry in a bit of oil for a minute or two on each side until brown, or keep in the fridge for up to a week.

Notes *At this point, you can shape the mixture into patties or links, but I find that you have to add so much flour to help them keep their shape that the sausages end up very dense. I prefer baking them and then cutting them into shapes.
