Sprouted Chickpea Hummus

Use chickpea sprouts in place of boiled chickpeas to make raw hummus. It tastes quite a bit different than regular hummus, but it’s just delicious in its own way.
Yield about 1½ cups
Time 5 minutes
  • blender or food processor
  • 2 c sprouted chickpeas
  • ½ c tahini
  • ½ c water
  • 2 cloves garlic, minced
  • 2 T lemon juice
  • salt
Directions Blend until the hummus is as chunky or as smooth as you like it.

Garnish suggestions: parsley, paprika, cumin, olive oil…

Notes Raw hummus is fantastic served with raw falafel.
