Use chickpea sprouts in place of boiled chickpeas to make raw hummus. It tastes quite a bit different than regular hummus, but it’s just delicious in its own way.
Yield: about 1½ cups

- blender or food processor
Ingredients
- 2 c sprouted chickpeas
- ½ c tahini
- ½ c water
- 2 T lemon juice
- 2 cloves garlic, minced
- salt
Directions
Blend everything until the hummus is as chunky or as smooth as you like it.
Garnish suggestions: parsley, paprika, cumin, olive oil…

Raw hummus is fantastic served with raw falafel.
