Raw Vegetable Noodles

Raw vegetables can be sliced or shredded into delicious, colorful noodles.

  • spiral slicer, julienne peeler, or vegetable peeler
  • asparagus (sliced into long strips)
  • beets, peeled
  • bell peppers (sliced into long strips)
  • butternut squash, peeled
  • cabbage (shredded)
  • carrots, scrubbed or peeled
  • celeriac, peeled
  • cucumbers, seeded
  • green onions (sliced into long strips)
  • jicama, peeled
  • leeks, carefully washed (sliced into long strips)
  • lettuce (shredded)
  • parsnips, scrubbed or peeled
  • radishes
  • sweet potatoes, peeled
  • turnips, scrubbed or peeled
  • yellow summer squash
  • zucchini
Directions For all of the above vegetables that don’t have preparation instructions (in parentheses), you’ll obtain the nicest noodles with a spiral slicer (spiralizer) or julienne peeler. However, if you don’t want to invest in another kitchen gadget, a good vegetable peeler works just fine to make fettucine-like noodles.
