- asparagus (sliced into long strips)
- beets, peeled
- bell peppers (sliced into long strips)
- butternut squash, peeled
- cabbage (shredded)
- carrots, scrubbed or peeled
- celeriac, peeled
- cucumbers, seeded
- green onions (sliced into long strips)
- jicama, peeled
- leeks, carefully washed (sliced into long strips)
- lettuce (shredded)
- parsnips, scrubbed or peeled
- radishes
- sweet potatoes, peeled
- turnips, scrubbed or peeled
- yellow summer squash
- zucchini
Directions
For all of the above vegetables that don’t have preparation instructions (in parentheses), you’ll obtain the nicest noodles with a spiral slicer (spiralizer) or julienne peeler. However, if you don’t want to invest in another kitchen gadget, a good vegetable peeler works just fine to make fettucine-like noodles.
