I know many people don't like it, but I swear by eating a good breakfast - it gives me more energy throughout the day and keeps me from thinking about lunch from 10am on. Here are some of my favorite breakfast recipes.
 

Applesauce
Sure you could just buy it at the store, but homemade applesauce is one of the all-time great treats.

Apricot-Nut Bread
This is a lovely, slightly sweet bread - great for breakfast or dessert.

Baked Omelette
I whipped up this simple recipe and in doing so discovered an easy, elegant way to feed eggs to several people at once.

Banana Bread
A good way to use up overripe bananas and great as breakfast or a snack.

Berry Cobbler
This is one of my favorite desserts of all time. It's also lovely with a cup of tea for breakfast or a mid-afternoon snack.

Berry Sauce
This sweet-tart sauce is wonderful on pancakes, French toast, and ice cream.

Berry Shake
This fresh berry shake is light and refreshing.

Bran Muffins
Here is a simple recipe for bran muffins - a delicious and very healthy breakfast item.

Breakfast Burrito
There's no set recipe for breakfast burritos - you can stuff them with pretty much anything you like. This recipe is for a basic breakfast burrito that you can customize to suit your own tastes.

Brunch Menu
Brunch can seem tricky to pull off, as it's a combination of breakfast and lunch. In fact, it's the easiest thing in the world - just be sure to combine a bit of both meals, with an emphasis on things that are easy to prepare and easy to serve.

Buttermilk Coffee Cake
Recipe for a sweet and simple coffee cake with fruit and nuts.

Cheese Blintzes
Although I've seen menus with various kinds of fruit blintzes listed, for me cheese blintzes are the only option. The creamy cheese filling complements the warm crêpe so nicely, I can't imagine filling it with anything else.

Cheesy Grits
Whether you serve them straight up or fried, cheesy grits make a great addition to breakfast or brunch.

Coffee Cake
Not only is this vegan coffee cake with fruit easy and delicious, it also tastes better the next day, so you can make it Saturday night and then wake up to vegan coffee cake for brunch.

Cranberry-Nut Bread
A sweet-tart bread that is equally good for dessert, tea, or breakfast.

Crêpes
Crêpes are thin pancakes that can be wrapped around just about anything to turn it into an elegant meal, or just folded and topped with something yummy. Try some of these fillings and toppings, or experiment to invent your own.

French Toast
This is the recipe for the best French toast I've ever had - a variation on the house recipe at a little café I used to work at in Illinois. I hope you enjoy it!

Fruit Salad
There's nothing like a bowl of fresh, sweet fruit salad in the summer. No one really needs a recipe for fruit salad, but here are some ideas to get you started..

Fruit Smoothie
Cool and refreshing, smoothies are a delicious and nutritious way to quench your thirst and even satisfy a minor hunger.

Gingerbread
Moist and spicy, gingerbread is a perfect Christmas treat.

Granola
This crunchy granola has enough protein and fiber to get you through the whole day!

Home Fries
Home fries take a bit of time, but they make a great addition to breakfast or brunch.

Oatmeal
Oatmeal is one of the great breakfasts - not only is it packed with nutrients, it's also easy to cook and can be customized to your heart's content.

Oatmeal Pancakes
These moist pancakes are delicious with applesauce, berry sauce, fresh fruit, or yogurt.

Omelette
Omelettes (or omelets) are quick, easy, and very versatile. They're great at any time of the day, especially breakfast or brunch. Following these instructions to the letter will leave you with a very light, fluffy omelette that will melt in your mouth.

Pancakes

Potato Pancakes / Latkes
Potato pancakes, or latkes, are a Jewish dish traditionally served at Hanukkah. Whether you're Jewish or not, crispy potato pancakes are delicious at breakfast and brunch.

Raspberry Nut Muffins
Raspberries and nuts make a sweet breakfast treat.

Sausage
This is a delicious, protein-packed, vegetarian breakfast side dish.

Scrambled Tofu
Although scrambled tofu doesn't taste quite like scrambled eggs, it's easy to make and can take any of the additions and toppings you'd would put in an omelette.

Spanish Tortilla
This potato omelette is a traditional Spanish tapa, or appetizer, but it's equally good for breakfast or brunch.

Sweet Potato Muffins
A great way to start the day.

Sweet Potato Pancakes
These crunchy pancakes are delicious at any time of day or night.

Tempeh Hash
This simple recipe yields a high-protein breakfast.

Waffles

Watermelon Blackberry Soup
Think fruit in soup is bizarre? Don't let your prejudice get in the way - this cool soup is delicious on a hot summer day.
