Reader Recipe: Felafel
Felafel are crunchy chick pea nuggets from Lebanon that make a delicious and
very healthy sandwich.

- food processor or hand mixer
- baking sheet or frying pan

| Ingredients |
- 1½ c chick peas, soaked/cooked or canned, drained
- ½ large onion
- 4-6 cloves garlic
- 2 t cumin
- 1/3 loaf brown rice bread or 4 slices regular bread
- 1 T red pepper flakes
- 2 T fresh parsley, chopped
- several T flour

| Directions |
Blend everything but the parsley and flour in food processor or with hand mixer until smooth. Stir in parsley. Form into 1-in. balls, then flatten somewhat and coat with flour. Bake on greased baking sheet at 450F for 10 minutes, turn, and bake another 10 minutes. Alternatively, you can fry the felafel in oil until brown.

I like felafel dipped into hummus or baba
ganouj, but they're also terrific in a sandwich.
