Recipe: Home Fries
Home fries take a bit of time, but they make a great addition to breakfast or
brunch.

- medium bowl
- wooden spoon
- cookie sheet
- rubber spatula

| Ingredients |
- 1 pound potatoes (2-3 medium), scrubbed or peeled
- ¼ c olive oil
- 1 t paprika
- ½ t cumin
- ½ t salt
- ½ t pepper
- ¼ c red onion, finely chopped
- 2 T fresh rosemary, minced

| Directions |
Preheat oven to 350. Cut the potatoes into 1-in cubes. Mix the oil and spices in the bowl, add the potatoes, and stir until coated. Spread the potatoes in a single layer on the cookie sheet, and drizzle with remaining oil (use rubber spatula to scrape out bowl). Sprinkle with onions and rosemary, then bake for 30-40 minutes, until golden brown and slightly crunchy. Serve hot!
