Recipe: Israeli Salad A mixture of finely diced vegetables served with a tart dressing.

| Ingredients |
- 2 c assorted vegetables, such as
- cucumber - tomato - green
or red onions - radishes - avocado - bell peppers - dill pickles - 2 T fresh mint or parsley, chopped
- 1 T olive oil
- 2 T lemon juice
- salt
- pepper
|
| Directions |
Dice all of the vegetables and place in bowl with mint or parsley. Toss. Drizzle with oil and lemon juice, season with salt and pepper, toss, and serve.
