vegetarian Recipe: Israeli Salad

A mixture of finely diced vegetables served with a tart dressing.

Yield 1-2 servings
Time 10 minutes
Tools
  • knife
  • salad bowl
  • fork
Ingredients
  • 2 c assorted vegetables, such as
     - cucumber
     - tomato
     - green or red onions
     - radishes
     - avocado
     - bell peppers
     - dill pickles
  • 2 T fresh mint or parsley, chopped
  • 1 T olive oil
  • 2 T lemon juice
  • salt
  • pepper
Directions Dice all of the vegetables and place in bowl with mint or parsley. Toss.

Drizzle with oil and lemon juice, season with salt and pepper, toss, and serve.

Notes Also try Israeli Za'atar Salad.
