vegetarian Salad Recipes

Ah, salad. That's all vegetarians eat, right? Of course not! But most of us do eat a fair amount of salad, and personally, I get tired of eating the same old lettuce every day. Here are recipes for some of my favorite salads.

Antipasto
Antipasto, which means "before food" in Italian, is a salad-like appetizer consisting of various fresh and pickled vegetables, cheeses, and rolled or sliced meats. For vegetarian antipasto, you can either subsitute mock meat products or leave them out altogether.

Arugula Salad
Arugula isn't to everyone's taste, as it has a slightly spicy, peppery flavor. For those who can't get enough of it, this salad with toasted pine nuts will hit the spot.

Asparagus Salad
Asparagus, olives, mint, bell pepper, and onion - a nice mix for a summer salad.

Autumn Salad
Or fall salad, if you prefer. A colorful and flavorful salad to enjoy when the weather changes and the leaves begin to fall.

Avocado Tomato Salad
This is one of the simplest salads ever, and absolutely delicious.

Bean Salad with Walnuts and Feta
When you cook your own beans, they are one of the healthiest things out there, and they are delicious with just a pinch of salt. They are also wonderful paired with feta and toasted walnuts, as in this simple bean salad.

Beet Salad
I hated beets when I was a kid, but then as an adult I discovered that they don't come from cans. Fresh beets are packed with flavor, and this French beet salad couldn't be easier to make.

Bell Pepper Salad
If you like bell peppers, this beautiful salad made of roasted green and red bell peppers from North Africa (Morocco and Tunisia) will be a real treat.

Caesar Salad
Yes, it is possible to make vegetarian Caesar salad, and with this recipe you'll never even miss the anchovies.

Caprese
Tomatoes, mozzarella cheese, and basil can be sliced into towers or diced into salad.

Chèvre (Goat Cheese) Salad
The contrast between the cool lettuce and the warm goat cheese and toast makes this a real treat in the summer.

Chickpea Salad
Warm chickpea salad with artichokes and sun-dried tomatoes - a real treat.

Christmas Salad
This red, white, and green salad will help spread Christmas cheer.

Cole Slaw
Cole slaw, a perfect summer picnic salad, is traditionally made with mayonnaise. This cole slaw recipe includes several dressing variations.

Crudités
A platter of crudités typically consists one or more types of raw vegetables served with one or more dips. These can be served as an appetizer, at a buffet, in place of a salad - the sky is the limit. Here are some ideas for interesting crudité platters.

Cucumber Salad
Simple and refreshing, cucumber salad is the epitome of summer. Different herbs can make it seem like a completely different salad, so don't be scared to experiment.

Deviled Tofu
This delicious, low carb deviled tofu can be spread on celery or bread, or served atop a green salad.

Egg Salad
This classic egg salad can be enjoyed in sandwiches or atop a bed of lettuce and veggies. Also see my recipe for mock (tofu) egg salad.

Fruit Salad
There's nothing like a bowl of fresh, sweet fruit salad in the summer. No one really needs a recipe for fruit salad, but here are some ideas to get you started.

Greek Salad
Kalamata olives and feta cheese really spice up this otherwise simple salad.

Herb Salad - Sabzi
If you grow your own herbs, this healthy salad is a great way to enjoy them... or show them off.

Independence Fruit Salad
As an American, red, white, and blue make me think of independence day and patriotism, so that's what I'm calling this multi-colored fruit salad. The colors work for the UK and France too!

Israeli Couscous Salad
A mix of Israeli couscous, lentils, bell peppers, dates, and mint makes a subtle, refreshing salad.

Israeli Salad
A mixture of finely diced vegetables served with a tart dressing.

Israeli Za'atar Salad
Fresh vegetables tossed with sesame and sumac make a unique salad.

Lentil Feta Walnut Salad
An easy recipe for a delicious and protein-packed salad.

Lentil Salad
Like all beans and legumes, lentils are an excellent source of protein. Unlike the others, lentils do not need to be soaked before cooking. For an easy, healthy, quick meal, try this lentil salad recipe with onions and rosemary.

Macaroni Salad
A simple but tasty dish. Macaroni salad is great for picnics and buffets, or as a side dish.

Mixed Salad
There are probably millions of salad possibilities, even for what you might think of as a simple mixed salad. Here are some typical ingredients and a few popular variations.

Mock Egg Salad
If you don't want to eat eggs for whatever reason but like the soft texture and pleasant taste of egg salad, try this tofu version.

Mock Tuna Salad
A vegetarian "tuna" salad made with chickpeas, almonds, and seeds. Tuna fish was the very last meat that I gave up, and while this doesn't take exactly like tuna salad, it's close enough that I don't miss the real thing any more.

Moroccan Tomato Salad
A spicy tomato salad from Morocco that goes well with just about anything from the Middle East and North Africa.

Orange Salad
Both versions of this easy-to-prepare salad are wonderfully refreshing in the summertime.

Panzanella
Panzanella is a bread and vegetable salad from Tuscany. It's a pretty flexible recipe, as long as you have the two most important ingredients: very ripe tomatoes and day-old, good country bread.

Pasta Salad
A simple pasta salad with lots of flavor.

Porcini and Fennel Salad
Porcini, fennel, and vanilla oil make a simple but stunning salad.

Potato Salad
This sort of "everything but the kitchen sink" potato salad is perfect for a picnic or buffet.

Quinoa Salad
Quinoa is quick and easy to prepare, and it adds a subtle but wonderful flavor to vegetables.

Rice Salad
This is a very simple but lovely dish. Kids will especially like making their own salad by picking their favorite items.

Salade niçoise
Chickpeas or tofu can be used in place of the traditional tuna fish or anchovies for this vegetarian salade niçoise recipe.

Sesame Noodle Salad
Buckwheat noodles with various vegetables and sesame oil make a delicious, protein-packed Asian noodle salad.

Sun-Dried Tomato Salad
This tangy dish is easy to prepare and is especially delicious in the summertime.

Swiss Chard with Sesame Seeds
This simple swiss chard salad recipe, native to both Japan and Korea, is both nutritious and delicious.

Tabouli
Tabouli, sometimes spelled tabbouleh or tabouleh, is a cold Lebanese salad made with bulgar wheat, lemon, garlic, tomatoes, mint, and parsley.

Tempeh Mock Chicken Salad 
This simple tempeh salad really does resemble chicken salad. It's great in sandwiches or atop a green salad.

Tortellini Salad
A very simple yet surprisingly tasty salad, perfect as a first course or on a picnic.

Vegetable Salad
This salad is colorful, tasty, and a good way to use up some leftover vegetables.

White Bean Salad
This is a simple and delicious recipe, perfect for a summer picnic.

Wild Rice Salad
This earthy salad is a perfect accompaniment to soup.

Winter White Bean Salad
I served this warm white bean salad at a dinner party and more than half the guests wanted the recipe. It is absolutely delicious and very easy to make.
