Whether you're on the run or just don't feel like cooking something, a vegetarian sandwich is just the thing: quick, easy, and as healthy as you care to make it. Vegan Ingredients
- Avocado
- Bell peppers (raw or roasted)
- Cucumber
- Eggplant (grilled or sautéed)
- Fennel (roasted)
- Greens (dandelion, watercress...)
- Herbs (parsley, dill...)
- Hot peppers
- Lettuce (Romaine, leaf...)
- Mushrooms (fresh or grilled)
- Olives
- Onions
- Spinach
- Sprouts
- Tomatoes
Vegetarian Ingredients
- Cheese (mozzarella, swiss, cheddar, goat, gruyère, blue, cream...)
- Hard-boiled eggs
Prepared Fillings
My favorite veggie sandwiches
Classic Deli Sandwich - two slices toast
- mayonnaise
- 1 leaf of lettuce
- 4-5 cucumber slices
- 3 tomato slices
- 4 red onion rings
- 4 avocado slices
- 2 slices cheese (optional)
- ½ hard-boiled egg (optional)
- sprouts
Italian Sandwich
- Italian bread or focaccia
- mozzarella and/or provolone cheese, fresh or smoked
- a few sun-dried tomatoes
- roasted peppers and/or pepperoncini
- vinaigrette
- salt and pepper
Salad Sandwich - two slices bread or toast
- several leaves of various lettuces and spinach
- dandelion greens
- watercress
- tomato slices
- cucumber slices
- herb dressing
