Recipe: Noodle Kugel
Kugel is a traditional Jewish side dish that is usually slightly sweet but is
often served as a side dish, rather than a dessert.

- large saucepan
- colander
- 3 quart baking dish
- 2 bowls
- wooden spoon

| Ingredients |
- 1 pound wide egg noodles
- 2 c cottage cheese
- 2 c sour cream
- 4 eggs, slightly beaten
- ½ c sugar
- ½ c golden raisins
- 1 c tart apple, grated OR ½ c apricot, diced
- 1 c bread crumbs
- 1 t cinnamon
- 1 t coriander
- 1 t light brown sugar
- 6 T butter, melted

| Directions |
Bring water to a boil, add noodles, and boil until just tender.
Drain and rinse with cold water. Meanwhile, preheat oven to 350 and butter the baking dish. Combine cottage cheese, sour cream, eggs, sugar, and fruit, stir
in noodles, and transfer to baking dish.
Combine remaining ingredients and top the kugel. Bake for about 45 minutes, until top is golden brown. Let cool for 10 minutes and serve.
