Recipe: Breaded Tofu
This crunchy tofu is very bland by itself, but great for dipping into
peanut sauce or barbecue
sauce.

| Ingredients |
- 1 carton extra-firm tofu
- ¼ c cornmeal
- ¼ c wheat flour
- ¼ c fine bread crumbs
- salt
- pepper
- several T peanut or sesame oil

| Directions |
Drain the tofu but do not pat dry. Slice cross-wise into about 8
½-inch slices, then once length-wise, so that you end up with about 16 equal
pieces. Combine cornmeal, flour, bread crumbs, salt, and pepper,
and use about half of mixture to cover plate.
Shake excess water from tofu then place on top of dry mixture and
turn to coat. Sprinkle more of the dry mixture on top as needed. Set coated
pieces aside.
When all of the tofu is breaded, heat the oil over medium heat.
You should have enough oil to cover the bottom of the pan.
Add a single layer of tofu pieces and fry until golden, about 5
minutes. Turn and cook the second side, then repeat with remaining tofu.
Serve hot. |
| Notes |
If you want the tofu itself to have more flavor, you could marinate it
before breading and/or add herbs + spices to the dry mixture. |
